Coxinha

Why does it seem like this is turning into a cooking blog? Maybe because that's what I do the most of that's worth telling about. I don't know. But what I do know is that I'm excited to find a recipe for this: Coxinha (pronounced co-sheen-ya, yeah, I can't prounce it either). It's a Brazilian/Portugese food that Weston came home with a deep love for. It's his numbers 1 through 10 favorite on his top 10 favorites, and I am charged with the task of finding out how to cook the stuff. So, I will keep you updated. Before I can make them, I have to wade through about a million different recipes and try to find the one that sounds like what he's describing. Isn't interest the number of variations you can find for one recipe?

Basically, it's shredded chicken, cooked with garlic, carrtos, and herbs, surrounded by a dough made from the homemade chicken broth, potatoes, and flour, breaded in bread crumbs and deep fryed until golden. Sounds great!

I have a friend who spent a few years growing up in Brazil who also loves Coxinas - I asked him about recipes/restaurants in the area and he recommended a Brazilian restaurant Taylorsville called Central do Brasil. Its on 4700s and 2586w. He also told me to forward the message to try the Pastel de Romeo y Julieta.
