The Easiest Sunday Dinner You'll Ever Make

We have the best and worst of Sundays. Church starts at 2:30, so we have plenty of time to sleep in and still get things done beforehand. But that also means that church ends at 5:30, and you're absolutely starving when you finally get home. So, unless you started dinner before you left, you're looking at 7 or 8 pm before dinner. And even if you start a roast, you sill have potatoes and gravy to fix before you can actually sit down to dinner. This is how you fix it: make Sunday Slow-cooker Chicken, add rolls and a salad. You're golden. Eat it instantly when you get home.

Sunday Slow-cooker Chicken

4-6 boneless skinless chicken breast*
2 cups baby carrots
6 potatoes, cut into bite-sized pieces (Weston would like you to know that he likes skin on his potatoes.)
1/2 onion, finely chopped
2 packets dry zesty Italian dressing mix
2 cans cream of chicken condensed soup

Mix one can soup and one packet dressing together and spread on the bottom of the cooker. Layer the chicken, onions, carrots, then potatoes. Mix the second can of soup and packet of dressing and spread over the top. Cook on high heat for 4 hours or on low for 6 hours, or until chicken is done and vegetables are tender. Viola! You're done.

*Note: use as many as you want. I usually do one per person. If you're doing more than 6, you might consider making more of the sauce and adding more veggies. You may need to use another crock pot.
